Easy Meals for College Students
School is back in full swing! If you’re a college student, you may be experiencing a lot of change when it comes to feeding yourself. This may be the first time you’re totally in charge of your own meals. Dorm rooms typically only allow a microwave and a mini fridge. Some dorms, but not all, may have a communal kitchen space. If you’re living in a space with a kitchen, it can still be difficult navigating eating between classes and social obligations while staying within a college budget.
College doesn’t have to mean living solely on ramen noodles or pizza (though these can be delicious and easy options), and it certainly doesn’t mean skipping meals or snacks! It’s super important to prioritize eating so that you can be nourished and full of energy to make it through classes, study sessions, and fun with friends. We searched the web and compiled a few of our favorite suggestions for easy recipes you can make with minimal prep and cooking equipment needed.
There’s nothing wrong with the classic Cup O Noodles or packet of instant ramen, but to really make this a nourishing meal, we suggest adding a couple of items. Adding an egg, firm tofu, or sliced pre-cooked chicken breast adds filling protein, and you can add almost any quick-cooking veggie you like to the hot broth once cooked. Spinach, cabbage, or frozen peas all make good options.
2. 5-minute Microwave Mac n Cheese
Sure, Easy Mac cups are great in a pinch for a snack, but they’re too light for a meal on their own. With this recipe, you can increase the ingredients to make enough to meet your hunger level and use whatever cheeses you like. This could be paired with a steamable frozen bag of your favorite veggies, or you could toss in some broccoli or cooked chicken breast directly into the mac.
3. Dorm-Friendly Chicken Quesadilla
Quesadillas are a great option because they’re quick and can be filled with anything you like. This recipe calls for chicken, bell pepper, and cheddar cheese. You could even scramble an egg in the microwave and use that in place of the chicken for a breakfast quesadilla!

Don’t forget to take advantage of on-campus meal options! Many colleges offer a few different dining plans you can choose from, many of which include on-campus restaurants or food stores in addition to the dining halls. Make sure you know the days and hours the on-campus options are open so that you’re not caught off guard late-night or on a weekend.
