Quick and Easy Recipe Round-up

The summer heat can make cooking a challenge - with temperatures rising it can be hard to find the motivation to turn on the oven or make something that sounds satisfying. But having a few easy go-to recipes in your back pocket can help when you are feeling stuck and make sure to keep yourself nourished and fed.

We rounded up some of our favorite go-to easy meals to share. Most of the ideas below include less then 10 ingredients and require minimal cooking!

Trader Joe’s can be a great resource for pre-marinated meats that are easy to whip into a full meal with all components. We love grilling up some of their pre-marinated chicken shawarma thighs, slicing into a pita pocket and topping with tzatziki sauce, cucumbers and tomatoes. You could even add some thinly sliced red onions and feta for extra flavor.

Pasta salad is a great option to make in bulk and eat throughout the week. Simply make the pasta as directed, top with canned corn, red onion, and avocados. Dress with lime juice, olive oil, and salt and pepper to taste. If you’d like you could add chicken or black beans for added protein.

A one-pan meal makes sure you have all components on your plate with little clean up or mess. We love using frozen items to help cut down on prep and mess. Add shrimp (fresh or frozen, thawed) to a pan. Slice up your favorite sausage, chicken sausage, or vegan sausage. Add potatoes, sliced zucchini and bell peppers. Voila! A full meal is ready in a snap!

These vegan tacos require no cooking and can hit the spot on a taco Tuesday at home. Add black beans and corn to your tortilla of choice. Simply top with your favorite vegan cheese/sour cream, salsa, avocado and shredded lettuce.

Chicken parmesan is another great option that includes all components on one plate. The key to making this meal easy is using pre-cooked, frozen, breaded chicken. As the chicken cooks (an air-fryer will make this even easier!), make the pasta. When the chicken is done, top with pasta sauce, mozzarella, and basil. Pop back in the oven or air-fryer for just a few minutes. Serve with the cooked pasta.
